Vanishing Oatmeal Cookies (Trisha’s Take On This)


  • 10 Packs PureVia (natural zero calorie sweetener)
  • 1/2 cup Smart Balance, softened
  • 1 cup water
  • 4  eggs whites
  • 1  tablespoon vanilla
  • 4 scoops Elite Protein Powder
  • 1 cup apple sauce
  • 1-1/2  whole wheat flour
  • 1  teaspoon baking soda
  • 2  teaspoons ground cinnamon
  • 3  cups Quaker® Oats (quick uncooked)
  • 1/2  cup dates
  • 2/3 cup pecans

 Heat oven to 350°F. In blender mix smart balance, PureVia, water, egg whites, vanilla and protein powder on medium speed  until creamy. Add apple sauce mix well. Add combined flour, baking soda and cinnamon; mix well. Add oats, dates and pecans; mix well. Form dough into round balls and place on parchment paper on cookie sheet. Bake 12 to 15 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
